Summary

The main objective of the present thesis is to develop a mathematical model for predicting the transfer of oxygen and carbon dioxide, as well as energy transfer, between apples and the surrounding atmosphere during storage. The physical model is based on molecular diffusion with chemical reaction, and the surrounding ambient can be either a controlled atmosphere or atmospheric air. The type GALA and FUJI apples are explored because of their importance for the Santa Catarina state, and due to their great impact and preference in national and international markets. [...]
